It may be my new p4 2.8ghz, but I think Killer Instinct recording = Borked,.. as I recorded a nice record and played it back only to see the last fight as the first.. and of course.. it failed to play properly. Anyone else have this kind of problem?

Try removing the hard drive difference file (kinst.dif) before recording and playback.

Is there a way we can just hack this up like we've done with the NVRAM file? Or would recordings get borked still?

I would hope that -diff_directory NUL would work. Or just use a batch file or something.
