Wine regression confirmed. Upgrading to Wine 3.21 has fixed the issue.

As an alternative, you can download http://replay.marpirc.net/txt/scores3.htm to your MAME folder, and you can view at least the top 3 scores for whatever game you're play in MAME via the External DAT View menu.

The problem with MAMEUI is that it is very much Windows-only, and would require an extra code base to build and maintain. They were removed due to it getting difficult to keep it working with the mewui code, without having to completely re-write it, which at the time was constantly changing.

Unfortunately, you can't check your score until all credits are used up, it will simply start a new game immediately after the continue timer.
